Slow Cooker Pumpkin Soup

Ingredients


  • 1 medium sized pumpkin
  • 2 carrots
  • 1 medium sized potato
  • 1 onion
  • 1/2 tsp ground cumin
  • 1/2 tsp ground nutmeg
  • 1 tsp ground ginger
  • 2 tbsp chicken stock powder
  • 2 cups boiling water
  • salt and pepper to taste
  • 1/2 cup cream



Method


  1. peel pumpkin and cut into even chunks
  2. peel potato and cut into even chunks
  3. peel carrots and cut into even pieces
  4. dice onion and place vegetables in slow cooker
  5. in a mug mix stock and spices, fill mug with 1 cup water and mix
  6. add liquid to slow cooker and cook on low 4hrs or high 2hrs
  7. blend with a electric mixer and add cream
